Turkey Sloppy Joes

Ingredients

1 tablespoon olive oil

¼ cup chopped onion

¼ small red or green bell pepper, chopped (about 2 tablespoons)

1 garlic clove, minced or pressed

Kosher salt

⅔ cup tomato sauce

¼ cup beer or water

1 tablespoon cider or wine vinegar, plus additional as needed

1 tablespoon packed brown sugar

2 teaspoons ancho or New Mexico chili powder

1 teaspoon Dijon mustard

½ teaspoon Worcestershire sauce

1 large or 2 small turkey thighs (1½ pounds total), skin removed

2 hamburger buns

Directions

Preparing the Ingredients. Set the Crock-Pot Mini Express® to “sauté”, heat the olive oil until it shimmers and flows like water. Add the onion, bell pepper, and garlic, and sprinkle with a pinch or two of kosher salt. Cook for about 5 minutes, stirring, until the onions just begin to brown. Add the tomato sauce, beer, cider vinegar, brown sugar, chili powder, mustard, and Worcestershire sauce. Bring to a simmer. Stir to make sure the brown sugar is dissolved. Place the turkey thigh in the cooker.
